I am looking at getting either a Cruiser 30ES (8476 Lbs) or a 30RE (7969 Lbs) and would be towing it with a 2003 Silverado 2500HD 4WD Gas with 4:10 rear end. Mostly short trips but could take it further. I'm sure it will be a dog on hills, but any chance I could damage the truck?

I think you will do just fine. I know several people that are pulling 5'ers in that weight range with trucks similar to yours with no problems.

I towed my 30SK with the same set up (2001 plus Ext cab, 6.0L) and it pulled fine except for the hills. I would have to drop to 3rd and sometimes 2nd to get over the higher passes. On the flats, I was in OD cruising at any speed I wanted. I would definitely not call it a dog but you do need to remember your limitations.

I think your OK. Just swallow your pride and throw the ego out the window on the hills - LOL. I towed 8000lbs across the country, Virginia to Moab, UT several times. It was a 10K construction trailer with a very lifted jeep hanging in the wind plus a lot of parts. 2001 Dodge 5.9L with 4:10s Gas mileage was bad at 6 mpg, but it did it. Your trailer should tow better than my jeep/trailer which was sitting super high above the cab, and your truck is built a lot heavier than my 1500.

The 2500 chassis shouldn't have any problems handling the load. Check the towing rating for your truck. The 410 gear usually gives you more capacity. Did the truck come with a tow package, like tranny coolers, bigger radiator etc. ? If not you may need some after market goodies.

Truck has towing package and spec says 10,200 lbs. Just worried that the 30ES, at the dealer is listed at 8,700 lbs, only leaves me with 1,500 lbs of cargo. I haven't weighed the TT that I have now (sould be 6,800 lbs) but sometimes even that seems heavy on hills.
